SMS: Strawberry Rhubarb Cobbler Pie (with a change)


The SMS recipe this week was the aforementioned Strawberry Rhubarb Cobbler Pie. I have never used rhubarb in anything so I was somewhat excited to try something new. It looks like rhubarb is in season from April to October but after 4 separate trips to the grocery store, I gave up on finding rhubarb. So my pie is actually Strawberry Peach Cobbler Pie. I used canned peaches so my pie filling was a bit runnier than it would normally be. Because of this I added an extra tablespoon of corn starch. The filling was still a little thin but the flavor was divine. I think my absolute favorite part was the Cobbler topping. Don't leave out the lemon zest, it adds a subtle but delicious flavor!

  2. Oooh, good call strawberries and peaches! I'm such a sucker for baked fruit and I really need to branch out and try some of the fabulous ideas I've seen this week! Your pie looks perfect and I completely agree with you about the cobbler topping, it was fabulous!! I'm probably going to make some extra biscuits next time to eat all by themselves. Thanks for baking with me this week :)

  4. I think strawberries and peaches is a great combination. I grew up on strawberries and sour cream and peaches and sour cream so I love both. Your pie came out beautifully.

  8. Your pie looks terrific! I loved the topping, too. Last summer the group made the peach cobbler in the book, which has the same topping - I definitely recommend it.
